SAMOSAS THREE WAYS

So, in an attempt to emulate one of Kris' old college favorite greasy treats we've created our own version of samosas. You can use a variety of shells. We just tried three: egg roll wrappers, flour tortillas and puff pastry. All were good.

Ingredients

1 tbsp vegetable oil
1 lb Ground meat (beef, chicken, turkey, etc.)
4-6 cloves of garlic or to taste
1/4 tsp freshly grated ginger or to taste
1 diced onion
Curry powder
Cumin
Cinnamon
Worcestershire (optional)
Hot sauce (optional)
Garlic powder
Salt & Pepper
~1/3 c cilantro (optional)


Flour tortillas and a flour and water paste to hold it together
Puff pastry and a beaten egg for an egg wash
Egg roll wrappers


Steps

1. Turn on a stove element to medium heat. Pour some oil in a pan or spray with a cooking oil spray. Add the garlic and ginger. Wait or bring the heat high enough so the oil, ginger and garlic start to sizzle and you can smell the goodness. Add the onions and fry until the onions begin to soften.

2. Add the meat now, and cook until the meat has started to brown. Add about 1/2 cup of water. Begin seasoning. Personally, we think all recipes should be made to taste, so we've listed the spices we've used, but not the exact amounts. Basically, we just sprinkle a bit of each until we're happy with the way it tastes. We use more curry powder than anything, and go easy on the cumin and cinnamon since they're strong flavors. Be careful of how much salt you add. You need to have enough to season the meat, but it's easy to get carried away.

3. When the meat is fully cooked, the water has evaporated and the filling mixture tastes yummy, toss in some cilantro.

4. There are many different ways you can fold any of the shells. We've seen them usually folded in a triangular shape. However, we just followed the folding directions on the back of the egg roll wrappers to make the samosas using that shell. With the tortillas, cut the tortilla in half so you end up with 2 half circles. Fold into a cone, and hold together put putting some flour and water paste on both sides. Once it feels secure, put a spoonful of filling inside...enough so you have good clearance to be able to put some more paste on the open side and seal it up. Use your fingers well, and press together the two open sides of the tortilla so it stays closed after you put it down. For the puff pastry, roll it out so it become thinner. Cut the puff pastry into three long rectangles. Spoon some filling onto the pastry and fold to make triangles. Wet the edges with some egg wash or water and use your fingers to seal the edges.

5. Deep fry the samosas with the egg roll wrappers and tortillas at 375 degrees until golden brown. Bake the puff pastry ones at 400 degrees for about 20 minutes or until golden brown.
