We eat a lot of salads, and the amounts of ingredients will change based on how much we have around the house, and how tangy we want our dressing that day. We prefer more tang so we usually don’t add more than a teaspoon or so of oil. Sometimes for our greek dressing we’ll add other vinegars too like white wine, and balsamic if we want it a bit sweet.

Ingredients:

Salad
Chopped romaine hearts Seeded tomatoes (we buy the campari tomatoes from Costco which have a great flavor all year round since they’re greenhouse grown)
Seeded English cucumber
Capers
Feta
Diced red onion
Kalamata olives (if we have them on hand)
Pepperocinni (sometimes depending on how we’re feeling )

Dressing

¼ c red wine vinegar
2 garlic cloves
Dried dill to taste
Greek spice seasoning to taste, ¼ - 1 tsp…we use Konriko brand
Dried mustard powder to taste, about 1/8 tsp
Fresh lemon juice (sometimes)
Extra virgin olive oil, ½ - 1 tsp

Steps:

Combine all dressing ingredients and adjust to taste.
In a large bowl add all salad ingredients and toss with dressing.
